Ingredients

"Sacherschinken" Ham and Truffle Roll with Green Asparagus

serves 4 persons:

8 slices of "Sacherschinken" Ham or "Prager Schinken" Ham (approx. 16 x 8 cm in size)
150 g of "Moosbacher" cheese, grated (or a similar hard cheese)
200 g Ricotta
100 g Picotta cream cheese
12 green asparagus tips
2 tbsp. sunflower oil
1 fresh summer truffle
1 tbsp. white balsamic vinegar
1 handful of young spinach leaves, frisée lettuce and chervil
Sacher house dressing
a dash of Tabasco sauce
salt

Preparation

For the cream filling, mix the grated cheese with the Ricotta, cream cheese, Tabasco sauce and salt. Fill a piping tube with the cream and pipe onto the ham slices. Roll up firmly and put two rolls onto each plate.
Cook the asparagus tips al dente in salted water, quench and drain. Dress in sunflower oil, balsamic vinegar and salt and place onto the rolls. Dress the salad with the house dressing and arrange this around the rolls. Complete with a garnish of truffle shavings.

Tip:

The cream cheese filling can be varied according to personal taste and availability with fresh herbs or baby vegetables.
